Honey Soy Chicken Bowl
Ingredients
- 1 lb boneless chicken breasts
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tsp grated ginger
- 2 cloves garlic, minced
- 8 oz cooked white or brown rice
- 3 cups mixed greens (such as arugula and spinach)
- 1/4 cup sliced green onions
Instructions
- 1Preheat oven to 400°F; line baking sheet with parchment paper.
- 2Toss chicken in soy sauce, honey, ginger, and garlic on the prepared baking sheet.
- 3Bake for 12-15 minutes or until cooked through.
- 4Cook rice according to package directions.
- 5Assemble bowls by placing chicken atop a scoop of rice, topped with mixed greens and green onions.
