Mediterranean Quinoa Bowl
Ingredients
- 1 cup quinoa
- 2 cups water or vegetable broth
- 2 tbsp olive oil
- 1 red bell pepper, diced
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tbsp Kalamata olives, pitted
- Feta cheese, crumbled (optional)
Instructions
- 1Cook quinoa according to package directions.
- 2Heat olive oil in skillet, sauté bell pepper and onion 5 minutes.
- 3Add cherry tomatoes, cook until tender.
- 4Stir in garlic, cook 30 seconds.
- 5Combine cooked quinoa with vegetable mixture; top with olives and feta.
