Easy Mushroom Risotto
Ingredients
- 1 cup Arborio rice
- 4 cups chicken broth, warmed
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 8 oz mixed mushrooms (button, cremini, shiitake)
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- 1Heat oil in skillet over medium-high; add onion, cook until softened.
- 2Add Arborio rice; cook 2 minutes, stirring constantly.
- 3Warm broth in separate pot; pour into rice mixture in 1-cup increments.
- 4Stir after each addition until liquid is mostly absorbed.
- 5Add mushrooms and garlic; cook until tender.
- 6Remove from heat; stir in Parmesan cheese.
