Thai Peanut Noodles

Ingredients

  • 8 oz rice stick noodles
  • 1/4 cup creamy natural peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tsp grated ginger
  • 1/4 tsp red pepper flakes (optional)
  • 8 oz cooked chicken (or tofu), diced
  • Fresh cilantro leaves, chopped

Instructions

  1. 1Cook noodles per package directions, drain.
  2. 2In blender or food processor, combine peanut butter, soy sauce, and honey; blend until smooth.
  3. 3Add ginger and red pepper flakes to peanut sauce, stir to combine.
  4. 4Toss cooked noodles in peanut sauce until well coated.
  5. 5Stir in diced chicken (or tofu).
  6. 6Garnish with chopped cilantro before serving.
