Thai Peanut Noodles
Ingredients
- 8 oz rice stick noodles
- 1/4 cup creamy natural peanut butter
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tsp grated ginger
- 1/4 tsp red pepper flakes (optional)
- 8 oz cooked chicken (or tofu), diced
- Fresh cilantro leaves, chopped
Instructions
- 1Cook noodles per package directions, drain.
- 2In blender or food processor, combine peanut butter, soy sauce, and honey; blend until smooth.
- 3Add ginger and red pepper flakes to peanut sauce, stir to combine.
- 4Toss cooked noodles in peanut sauce until well coated.
- 5Stir in diced chicken (or tofu).
- 6Garnish with chopped cilantro before serving.
